The Hilton London Bankside is just a stone’s throw from some of the city’s most iconic tourist attractions - London Bridge, Borough Market, Tower Bridge and many more.

The hotel is modern and edgy, with the wood and black metal décor giving it a cool, industrial feel.

We were able to check in at 3pm and given the keys to our King Junior Suite which was absolutely breathtaking.

When I opened the door to our room I was blown away by how huge it was, equipped with a living room, a bedroom and two bathrooms.

My first port of call was collapsing onto the huge, king-sized bed which felt like how I can only imagine falling into a cloud does.

The walls in the bedroom were lined with floor-to-ceiling windows and there was a long desk which worked perfectly as both a dresser and a desk.

After settling in, we grabbed our swimwear and headed down to the hotel’s basement where the pool, gym and spa live for an early evening swim.

Following a swim in the long, relaxing pool, I parked myself in the jacuzzi for some soothing me-time – the perfect way to unwind on a Saturday.

The atmosphere in the pool was perfectly serene and quiet and I would definitely recommend making time for it if you visit this Hilton.

While I didn’t use the gym during my stay, there is a window from the pool through to the gym and it was packed with a wide variety of equipment so that gym goers have everything they need.

For dinner, we headed out to London Bridge, which was only a ten minute walk away, and then wandered along the river Thames before it got dark.

The next morning, we chose to sleep in and skip breakfast as our suite was just so cosy we couldn’t bring ourselves to leave any earlier than we had to.

Instead, we enjoyed a coffee in our room and waited for the bottomless brunch we had booked at 12.30pm that day.

I am so glad we waited for brunch because when I tell you that this was the bottomless brunch of champions I am not exaggerating.

This was a four-course brunch topped off with bottomless prosecco and was delicious from start to finish.

The first course is the starters – yes, starters plural.

The Hilton London Bankside laid out an array of starters on a table in the restaurant buffet-style for diners to continue to help themselves to throughout the brunch.

To name a few, there was a range of salads, meats, cheeses, fish, bread and vegetarian options.

In addition to this feast, the hotel’s amazing kitchen staff custom made egg, pancake and waffle dishes.

The egg dishes available included an omelette, eggs Florentine, eggs benedict and eggs royale.

Personally, I chose to have an omelette with chilli, peppers and cheese which was rich, fresh and was piping hot as it was cooked to order.

These dishes are also unlimited – diners can enjoy as many as they want throughout their brunch.

While I would have loved to enjoy a sweet option, I was saving room for the remainder of the brunch.

However, for those who did opt for pancakes or waffles, there was a variety of sauces and toppings to choose from to make the meal your own.

After my omelette, I felt ready to much on to course three: the roast dinner.

I chose the roast chicken option and my boyfriend went for the roast beef, but there was also a vegetarian choice for anyone who wants one.

My chicken was full of flavour and perfectly cooked, alongside a huge Yorkshire pudding and the crispiest, fluffiest roast potatoes I have ever had.

To share between us, the waiters also brought a plate of broccoli, carrots and parsnips.

They even came over to offer us more gravy as we ate, to ensure that our roast was perfect.

This meal by itself was something of dreams and I can say with certainty I would go back just for the roast dinner if nothing else.

And if all of that wasn’t enough, there was a massive table brimming with colourful, beautiful desserts.

There were mini crème brulees, mini cheesecakes, cookies, chocolate truffles, brownies – the list goes on.

Instead of choosing just one, we collected a platter of sweet treats and shared them, trying as many as we could.

My personal favourite was the raspberry cheesecake, but the mango and white chocolate truffle was a close second.

There is the option of enjoying the brunch without bubbly for £38, but for £55 customers can enjoy bottomless prosecco alongside their bottomless feast.

The staff are extremely attentive, they topped our glasses up consistently and made sure that we never had an empty glass.

In addition to the tables of food, there was also a fun bellini bar where you could customise your prosecco with different syrups and fruits.

I was reluctant to leave the Hilton London Bankside after such an unreal stay.

The hotel is truly a hidden gem in London and I can’t wait to return soon.

The bottomless brunch here is by far the best I have ever had and I will without a doubt be taking all of my friends the next time we are planning a celebratory brunch.
