A new cheese made with locally brewed beer is now available to buy.

Wimbledon Brewery has teamed up with Cheddar Gorge Cheese Company to create the Copper Leaf Ale cheddar, made from American and British hops.

John Spencer, the big cheese at Cheddar Gorge Cheese Co, says half a litre of beer is used for every three kilograms of the cheddar. This makes the product approximately 16 per cent beer.

The artisanal cheese company is based in the village of Cheddar, Somerset. John and his wife Katherine own the only company that still makes cheese in the Cheddar Gorge.

Mark Gordon, founder of Wimbledon Brewery, said: "Here at the brewery we celebrate the best of British artisanal food and drink production, and so we’re honoured that the only cheddar producer still located in the village of Cheddar has chosen to produce this special example using our beer."

The new cheese will soon be available online and through the brewery.
